Slovak Potato Pancakes
My grandmother, Dorothy Mawhinney Hudock, passed on this Slovak recipe.
Ingredients
- 4 med potatoes
- 3 tablespoons Just Egg (or one chicken egg, if not vegan)
- 1 small onion (chopped)
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Vegetable oil (I use olive oil for pretty much everything)
Instructions
- Peel the potatoes.
- Grate using the large holes on the grater.
- Put the grated potatoes into a clean, cloth dish cloth and squeeze out the liquid.
- Put in large bowl and add the chopped onions, salt, pepper, flour, and Just Egg. Mix together.
- Add oil to large skillet and put on medium--high heat. I use a cast iron frying pan.
- Make a small patty of the potato mixture with your hands.
- Place in skillet and repeat until skillet has is full but the patties don't touch.
- Allow to brown on one side.
- Flip with spatula to other side.
- Use the spatula to press down on the patty.
- Remove from skillet when brown .
- Place on papertowel covered plate to drain.
- Serve while hot.
