Slovak Potato Pancakes

My grandmother, Dorothy Mawhinney Hudock, passed on this Slovak recipe.

Ingredients

  • 4 med potatoes
  • 3 tablespoons Just Egg (or one chicken egg, if not vegan)
  • 1 small onion (chopped)
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Vegetable oil (I use olive oil for pretty much everything)
Instructions
  • Peel the potatoes.
  • Grate using the large holes on the grater.
  • Put the grated potatoes into a clean, cloth dish cloth and squeeze out the liquid.
  • Put in large bowl and add the chopped onions, salt, pepper, flour, and Just Egg. Mix together.
  • Add oil to large skillet and put on medium--high heat. I use a cast iron frying pan.
  • Make a small patty of the potato mixture with your hands.
  • Place in skillet and repeat until skillet has is full but the patties don't touch.
  • Allow to brown on one side.
  • Flip with spatula to other side.
  • Use the spatula to press down on the patty.
  • Remove from skillet when brown .
  • Place on papertowel covered plate to drain.
  • Serve while hot.
